Are any tracking tools 100% accurate?
The simple answer is that none of them are accurate because they all rely on a pixel to load as the trigger for the counter.
Some people still surf with images turned off.
Google Analytics is touted as being the one you want to use, but it is not real-time, and I suspect they filter before you see the results.
At least, that's how it was the last time I used their data which was years ago.
It seemed to take several hours to show me that I'd clicked a link or viewed a web page.
That's no use for testing when you're running paid ads or a launch.
For those, you do need real-time data.
Some self-hosted solutions work pretty well, but they need a medium level of technical skill to set them up, and the results take a bit of interpreting to understand.
The other issue with self-hosted solutions is that they are usually unable to identify the different types of traffic and are quite limited in other ways.
All the available tools have limitations, so you need to grab something that gives you the necessary information.
I use ClickMagick, https://clickmagick.com/go/Burtm10, it's a paid solution, but it is under constant development and improving every week.
I also use several other tracking tools.
They do not give the same detail as ClickMagick and don't integrate as well with other sales platforms as far as reporting goes, but they are pretty good and will get you started.
